Birthday Cake Pancakes in home kitchen

  • 1 1/2 c. all-purpose flour
  • 1/4 c. powdered sugar
  • 2 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 1 1/4 c. whole milk
  • 1 large egg yolk, plus 3 egg whites
  • 1/4 c. rainbow sprinkles, plus more for serving
  • 4 tbsp. unsalted butter, melted and cooled
  • Cooking spray
  • 1 c. vanilla frosting
  • Whipped cream, for serving


  1. In a medium bowl, whisk flour, powdered sugar, baking powder, and salt until combined.
  2. In a large bowl, whisk milk, egg yolk, and butter until combined. Add the dry mixture and sprinkles to the wet mixture and fold until just combined.
  3. In another large bowl, beat the egg whites on medium-high until stiff peaks form, about 1 minute. Fold the beaten whites into the batter, just until combined, being careful not to overmix.
  4. Heat a medium nonstick skillet over medium heat. Grease skillet with cooking spray. Pour about 1/2 cup pancake batter into pan. When little bubbles appear, about 2 minutes, flip and continue cooking until both sides are lightly golden, about 1 minute more. Transfer to a plate or wire rack to cool slightly. Repeat with remaining batter.
  5. Stack pancakes on two plates, layering frosting in between. Top with whipped cream and more sprinkles.
